Homemade mayonnaise goes perfectly with Italian cheese bread and cured meats

This is, hands down, the easiest homemade mayonnaise recipe. Ever since a friend told me how easy it is to recreate store-bought mayo, I haven’t looked back and have never bought it from the shops again. It takes so little effort and tastes even better than the store-bought ones. Moreover, you know exactly what ingredients you put in it, and you can flavour it any way you want. What more can you ask? I must confess that I am a mayoholic, so much so that when I was pregnant with my second son, I used to have mayonnaise sandwiches with nothing else!! So this is a lifesaver for me.

I know it is not very good for you, and I know vegetable oils are not great either, but this recipe is fabulous as a compromise! It is delicious just as it is, but I have also flavoured it with garlic (especially for potato salads) or with spices. The choice is yours! Try it. You won’t regret it.

Once you have made it, try it with this beautiful cheese bread, and if you don’t finish it all in one go, you can store it in a glass jar or you can use one of these very cheap and handy sauce bottles, which are fab for when you want to squeeze some on hot dogs, or your pizza. Yep, you read that right!!! I come from Pesaro (Le Marche), where the famous composer Rossini was from and where the Rossini pizza (named after him) is topped with boiled eggs and mayo… I know… it is blasphemy even in the rest of Italy, but hey ho, it is delicious nevertheless, so I dare you to try it.

Easy 1 minute homemade mayonnaise

This makes around 250ml (8oz) of mayonnaise

Ingredients

  • 200 ml vegetable oil I usually use sunflower oil – do not use olive oil as it will not taste good!
  • 1/2 tsp salt or to taste
  • 1 tsp lemon juice or to taste
  • 1 egg

Instructions

  • Pour the oil, salt and lemon into the beaker or tall glass/container.
  • Now add the egg to the same container, put the stick mixer at the very bottom of the beaker, and press start without moving the blender. After a few seconds, you will see that the mayonnaise is starting to take form. Wait a couple of seconds, and then blend the rest of the oil, which will be left on top. And that is all there is to it!
